The brief
Taste Nature is a Dunedin institution — an organic grocery, café and apothecary that's been part of the city for decades. The owner-operator brought us in not to fix a problem, but to sharpen a strong business: to put tight systems and clear measures underneath it, make performance visible in every role, and take fuller advantage of the growth its location and foot traffic already offered. The mandate was to optimise for performance and profitability — and to build the operating discipline that lets the team hold those gains.
What the work delivered
Built a performance framework for each role across the business — a handful of weighted measures that add up to one clear picture, with a simple monthly scorecard that reads at a glance and works on paper or on a screen. It turns everyday effort into something measurable, so incremental gains show up and get repeated.
Moved and re-fitted the apothecary to a brighter, higher-visibility position — improving how customers move through the store and giving one of the highest-value ranges the prominence it earns. A single, deliberate move that changed the traffic pattern of the whole floor.
Reworked the café kitchen's systems and flow around capacity — so it can serve more, more consistently, without losing the from-scratch quality Taste Nature is known for. The engine room, tuned to keep pace with a busy floor.
Put simple shelf plans and a daily production standard behind the food cabinet and key ranges — turning "fill it up" into a defined, repeatable standard the team can hit every day, and that shows the moment it slips.
Mapped the store layout to put the highest-growth ranges in the path of the traffic the location already draws — making the most of every customer already walking through the door, and reading the space for where the next lift sits.
Built the team an AI operations assistant they can simply ask — the everyday how-we-do-it knowledge of the business, on tap. Good practice stops living only in one person's head and becomes something the whole floor can reach.
And for the owner-operator, a private AI "second brain" — an assistant that holds the moving parts of the business and helps them plan, weigh options and decide faster. The load of running the place, made lighter.
